POTATO SALAD FOR 50 PEOPLE | |
(As made by Hemphill Garden Club for the Future Fisherman's Foundation Celebrity Party in Hemphill, Texas). 20 lbs. potatoes, peeled and cubed 6 green peppers, seeded and finely chopped 2 bunches celery, leaves and stalks chopped 1 qt. mayonnaise 1 pt. mustard 1 lg. jar pimento stuffed olives 1 doz. eggs, boiled, peeled and chopped 1 bunch green onions, finely chopped Parsley, salt and pepper Boil potatoes gently, until tender. Drain and cool. Toss peppers, celery, olives, eggs, onions, parsley, salt and pepper with potatoes. Mix mayonnaise and mustard together until smooth and stir into the potato mixture. Garnish with sprigs of parsley and place in refrigerator until ready to serve. |
