CARROT AND PINEAPPLE KING COLE
SLAW
 
2 c. cabbage, coarsely shredded
1 c. carrots, coarsely shredded
1 can pineapple chunks, well drained
1/3 c. almonds (slivered), toasted
2/3 c. mayonnaise
2/3 c. sour cream
1 tsp. grated onion
1 tsp. sugar
1 tbsp. lemon juice
Pinch of salt

Blend together sour cream, lemon juice, sugar, onion and mayonnaise. Add a pinch of salt. Combine pineapple, carrots, cabbage and almonds in a large bowl. Add mayonnaise mixture and toss well. Chill at least one hour. Makes 6 servings.
