VEGETABLE FISH 
1 carrot, grated
3 green onions
1 tbsp. lemon juice
4 red snapper or orange roughy fillets
1 zucchini, grated
1/4 c. butter, melted
2 celery stalks, chopped fine
1 tomato, chopped (optional)

Mix together and spoon over fillets. Bake at 350 degrees for 30 minutes.
