MAYONNAISE CHIFFON CAKE 
2 1/4 c. cake flour, sifted
1 1/2 c. sugar
1/2 tsp. salt
3 tsp. vanilla
3/4 c. water
4 tsp. vanilla
1/2 c. mayonnaise
6 egg yolks
8 egg whites
1/2 tsp. cream of tartar

Sift together flour, sugar, and salt. Put in a large bowl. Make a well in the middle and put vanilla. Add water, vanilla, mayonnaise and egg yolks. In another bowl add egg whites and cream of tartar. Beat until stiff peaks. Fold egg white mixture into flour mixture. Put in a 10"x4" angel food pan. Bake at 325 degrees for 65 to 75 minutes. Top will be cracked and spring back when touched.
