EXTRA RICH MINT BROWNIES 
1 1/2 c. melted butter
3 c. sugar
1 tbsp. vanilla
5 eggs
2 c. flour
1 c. cocoa
1 tsp. baking powder
1 tsp. salt
24 (1 1/2") York (or more) Peppermint Patties

Grease a 13"x9" pan. In large bowl whisk butter, sugar and vanilla. Add eggs and stir until well blended. Stir in flour, cocoa, baking powder and salt; mix well. Set aside 2 cups batter. Spread rest of batter in pan. Arrange peppermint patties in single layer over batter about 1/2" apart. Spread rest of batter over patties. Bake at 350 degrees for 50 to 55 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Cut into 36 squares.
