KATHOLEEN'S DRIED APPLE STACK CAKE | |
1 3/4 c. sugar 1/4 c. molasses OR brown sugar 1 c. butter OR other shortening 2 eggs 1/2 c. buttermilk 6 c. all-purpose flour 3 tsp. baking powder 1 tsp. round cinnamon 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. nutmeg Preheat oven to 375 degrees. Cream sugar and shortening; add molasses, vanilla and eggs and beat thoroughly. Sift together dry ingredients and add alternately with milk to creamed mixture. Divide dough into six equal parts and shape into balls. Place each ball in the middle of a greased and floured 9 inch cake pan. Pat dough evenly to edge of pans. (Dough may be rolled into six 9 inch circles on lightly floured board). Bake for 10 to 12 minutes in 325 degree oven until top is lightly browned. Stack with dried fruit mixture ending with fruit on top. Mix together: 1 lb. dried apples Sugar to taste 1/2 tsp. allspice Let cake ripen in closed container for 10 to 12 hours before serving. |
