PINEAPPLE RIGHT-SIDE-UP CAKE 
1 (8 oz.) can unsweetened crushed pineapple, undrained
1 1/2 c. all-purpose flour
1/2 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 c. skim milk
3 tbsp. butter, melted
1 egg, beaten
1/2 tsp. vanilla extract
Cooking spray
1/4 c. firmly packed dark brown sugar

Drain pineapple, reserving 1/4 cup juice; set both aside. Combine flour and next 3 ingredients in a large bowl, and stir well, make a well in center of mixture.

Combine reserved pineapple juice, milk and next 3 ingredients in a bowl; add to dry ingredients. Stir just until dry ingredients are moistened. Spoon batter into a 9-inch square baking pan coated with cooking spray. Top with pineapple; sprinkle with brown sugar.

Bake at 350 degrees for 30 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack. Serves 9.
