CAULIFLOWER CHEESE PUFF 
1 med. cauliflower
1 tsp. lemon juice
1/4 c. butter
2 tbsp. flour
1 c. milk
3 eggs, separated
1 c. grated cheddar cheese
Salt and pepper to taste
1/4 c. bread crumbs

Cook cauliflower in salted water with lemon juice until tender; set aside. Melt butter in a saucepan. Add flour and cook until mixture is brown. Gradually stir in milk. Stir in egg yolks, grated cheese, salt, and pepper. Continue cooking over low heat until mixture is smooth. Break cauliflower into florets and place in a greased 9 x 13 inch baking pan. Beat egg whites until stiff. Fold into cheese mixture. POUR over cauliflower. Sprinkle with bread crumbs. Bake at 400 degrees for 30 minutes until puffy and brown.
