BROCCOLI - STUFFED CHICKEN
BREAST & POTATOES
 
1 (10 oz.) pkg. frozen chopped broccoli
1/2 c. bread crumbs
2 tbsp. grated Parmesan
1 tsp. grated onion
1/8 tsp. pepper
2 chicken breast boned & split in half
2 tbsp. oil
3 potatoes, peeled & sliced
1/4 tsp. paprika
2 tsp. flour
1 tsp. lemon juice
3/4 tsp. chicken bouillon
1/4 tsp. thyme
1 c. water

Prepare broccoli as directed on package. Mix broccoli, bread crumbs, cheese, onion and pepper. Set aside. Slice chicken horizontally, almost all the way through. Spread open. Pound with meat mallet to 1/4 inch thick. Place 1/4 of broccoli mixture on each half and close with toothpicks.

Cook in preheated skillet with oil over medium-high heat. Cook potatoes in remaining oil. Sprinkle with paprika. Remove. Stir in flour and slowly add water, lemon juice, bouillon and thyme. Cook until thickened.
