TOMATO-ZUCCHINI CASSEROLE 
4 tomatoes, peeled & sliced
1 onion, sliced thinly
3 tbsp. fresh basil
2 tbsp. brown sugar
4 tsp. butter
4 zucchini, sliced
Dash of salt & pepper
1 1/2 c. bread crumbs
2 c. sharp grated cheese

Layer the tomatoes, zucchini and onions. Add salt, pepper and crushed basil. Cover with bread crumbs. Sprinkle brown sugar over all, then add cheese. Dot casserole with butter. Bake covered at 350 degrees for 30 minutes, then uncovered for 45 minutes more.
