1 1/2 c. blanched almonds (8 oz.) 1 1/3 c. powdered sugar 1/4 tsp. vanilla 1/4 tsp. almond extract Pinch of salt 1 egg white 1/3 c. coarsely chopped walnuts 3 tbsp. minced dried apricots Preheat oven to 350 degrees. Grease and flour baking sheet. Grind almonds in processor until finely powdered, about 3 minutes. Blend in sugar, vanilla, almond extract, and salt. With machine running, pour egg white through feed tube and blend until mixture forms ball. Transfer to medium bowl. Knead in walnuts and apricots. Form dough into 1 inch balls. Pinch into irregular shapes. Arrange on sheet; bake 13-15 minutes. Makes about 3 dozen. |
