MARCY'S CHEESECAKE 
CRUST:

2 c. fine graham cracker crumbs
1/4 c. sugar
1 stick melted butter

CHEESE MIXTURE:

1 1/2 c. sugar
Pinch of salt
1/2 c. sour cream
1 tsp. vanilla
3 tbsp. flour
1 (8 oz.) cream cheese, softened
6 eggs, separated
3 tbsp. sugar

CRUST: Mix crumbs, sugar and butter together. Reserve 1-2 tablespoons of crumb mixture for top of cheesecake. Press remaining mixture into the bottom of a greased 9 or 10-inch springform pan.

CHEESE MIXTURE: In a bowl, mix the 1 1/2 cup sugar, flour, salt and cream cheese. Then add sour cream. In another bowl, mix 6 egg yolks and the vanilla and add to the cheese mixture. Whip the 6 egg whites until stiff while adding the 3 tablespoons sugar and fold into cheese mixture. Pour on top of crust and sprinkle reserved 2 tablespoons crumbs on top. Bake in 300 degree oven for 1 hour. Cool in oven for 1 hour.
