CUCUMBER RINGS 
2 gallon cucumber rings
2 c. lime
8 1/2 qt. water
1 c. vinegar
1 tbsp. alum
1 lg. bottle red coloring
4 1/4 c. water
4 1/2 c. vinegar
10 lb. sugar
18 cinnamon sticks
22 oz. red hot cinnamon candies

Use extra large cucumbers. Peel, cut into thirds, core and slice. Mix lime and water; add cucumber rings and soak 24 hours. Drain and wash in cool water. Soak 3 hours in cool water. Drain. Make syrup of vinegar, alum, color and enough water to cover rings. Heat and simmer for 2 hours. Drain.

Make syrup of water, vinegar, sugar, cinnamon sticks and red hots. Bring to a boil and pour over rings. Cover with tight lid or foil and let stand overnight. Next day, drain and reheat syrup and pour back over rings. Let stand overnight. Repeat this 3 times. Heat rings and syrup to boiling and place in jars and seal. Lots of trouble, but a delightful pickle for holidays and special occasions.
