MANHATTAN MEATBALLS 
2 lbs. ground beef
2 c. soft bread crumbs
1/2 c. chopped onion
2 eggs
2 tbsp. chopped parsley
2 tsp. salt
2 tbsp. butter
1 (10 oz.) jar apricot preserves
1/2 c. barbecue sauce

Combine meat, crumbs, onion, eggs, parsley, and salt; mix lightly. Shape into 1 inch meatballs. Brown in butter and drain. Place in 2 quart casserole. Combine preserves and barbecue sauce; pour over meatballs. Bake at 350 degrees for 30 minutes, stirring occasionally. Makes approximately 4 dozen.

These can be made ahead and frozen.
