CAJUN CAKE 
CAKE:

2 c. flour
2 c. sugar
1 tsp. vanilla
15 3/4 oz. can crushed pineapple
2 eggs
1 1/2 tsp. baking soda
1 c. chopped pecans
1 c. coconut

Mix all cake ingredients together and pour batter into a 9 x 13 inch pan. Bake at 325 degrees for 30 minutes. Mix all ingredients for icing and pour over cake while it is still warm, not hot.

ICING:

1 tsp. vanilla
8 oz. cream cheese
1/2 stick butter
1 c. powdered sugar
