BEEF IN BEER PROVINCIAL 
2 lbs. onions
3 lbs. chuck or tips, cubed
Flour
Salt & pepper to taste
1 pt. beer
French bread
5 tbsp. butter
3 tbsp. oil & butter mixed
2 cloves garlic
Paprika
Mozzarella or Muenster cheese

Slice and saute onions until soft and golden. Dust beef with flour and brown quickly in oil and butter. Combine beef and onions in Dutch oven with salt and pepper, paprika, garlic and beer. Cook 1 1/4 hours or longer until tender. Pour into large casserole top with sliced bread spread with some butter and cheese, brown under broiler.
