BEEF TIPS AND NOODLES 
4 lbs. boneless sirloin, cut into 1/2 inch cubes
1/2 c. vegetable oil
2 cloves garlic, minced
1 (28 oz.) can tomatoes, undrained and chopped
Hot cooked noodles
1 lg. onion, chopped
1/2 c. chopped green peppers
2 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. pepper

Dredge beef in flour; brown in hot oil in a large Dutch oven, stirring occasionally. Add remaining ingredients, except noodles. Cover and bring to a boil. Reduce heat and simmer 1 hour or until meat is tender. Serve over noodles. Yield 12-14 servings.

This was good.Only had 2lbs of meat so cut the ingredients. Simmered 1hr 20 min, meat, Still tuff, not a lot of juice so had to simmer on low. Next time think I will put in a can of beef broth. I also doubled the salt and pepper. It was tasty tho, I will make it again with modifications.
