BEAR'S MAC & CHEESE WITH PEPPERS
AND ONIONS
 
16 oz. pasta shells
1 stick butter (8 tbl)
1/2 cup flour
2 eggs, whisked
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. Greek seasoning (or Mrs. Dash, etc.)
1/4 tsp. black pepper
2 cups milk
1 pint sour cream
4 cups shredded or grated cheese (Be creative! combine 2,3 or 4 kinds!)
1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
1 cup (Cracker, toast, corn chip, potato chip, crouton or bread crumbs)

Preheat oven to 375°F.

Boil shells to just underdone. Drain. Melt butter in a medium saucepan. Remove from heat. Stir in flour and seasonings and work to a smooth. Stir in milk, sour cream and eggs. Bring to a slow boil. Combine onions and peppers in a bowl. Microwave for 90 seconds.

Stir onions and peppers into sauce. Simmer for 1 minute. Add cheese while stirring. Allow to bubble. Slowly fold shells into mix. Slowly fold into sprayed 3 qt. casserole dish.

Bake for 25 minutes. Pull and liberally sprinkle crumbs on top.

Return and bake 5-10 minutes. Don't burn the topping! ENJOY!
