RED BELL PEPPER AND ONION QUICHE 
1 prepared pie crust (Pillsbury)
4 eggs
2 cups whole milk (or half & half)
1 red bell pepper
1 onion (any kind)
1/2 cup Asiago cheese, grated
1/2 cup cheddar, grated
1 ball fresh Mozzarella (1/2 to 1 cup), sliced

Preheat oven 350°F. Put pie crust in pie pan. Cut red peppers in julienne or chopped your choice, cut onions small. Sauté peppers and onion with olive oil in pan for about 5 minutes till lightly cooked.

In a bowl beat the eggs and milk together. Add some sautéed onions and peppers to pie shell. Sprinkle some cheese and add egg mixture. Repeat till gone.

Bake at 350°F for 45 minutes to an hour.
