COTTAGE CHEESE COOKIES 
1 c. whole wheat flour
1/4 c. unprocessed bran
1/4 c. non-fat dry milk
1/4 c. toasted wheat germ
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. raisins
1/4 c. butter, softened
1/2 c. low-fat creamed cottage cheese
1/4 c. sugar
2 tbsp. honey
2 egg whites
1 tsp. vanilla

In a small bowl, combine the flour, bran, dry milk, wheat germ, baking powder, cinnamon, nutmeg, salt, and raisins. Set aside. In a large mixing bowl, beat the butter and the cottage cheese. Add the sugar and honey and beat the mixture until it is fluffy. Add the egg whites and vanilla; beat the mixture again. Gradually stir the reserved flour mixture into the cottage cheese mixture until just blended. Place rounded teaspoonfuls of batter about 2 inches apart on greased cookie sheets. Bake the cookies in a preheated 350 degree oven for 8 to 10 minutes or until the edges of the cookies turn golden. Remove the cookies from the pan to a rack to cool.
