RICOTTA CHEESE COOKIES 
3 eggs
2 c. sugar
1/2 lb. butter
1 lb. Polly O Ricotta cheese
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
4 c. sifted flour

Cream all ingredients together, then add flour. This is a double recipe. Bake 15 minutes at 350 degrees, ungreased pan.

ICING:

2 tbsp. butter
1 lg. cream cheese
1 box powdered sugar
Food coloring - sprinkles

Cream butter and cream cheese together until smooth and creamy; add powdered sugar a little at a time as desired to suit your own taste - beat until smooth. Add food coloring. If you prefer a cream cheese taste never use the whole box of sugar. Cool cookies completely before icing, then add sprinkles. Let cookies sit out overnight. Icing does not harden -- store carefully.
