RICOTTA CHEESE COOKIES 
1/2 lb. butter (1 c.)
2 c. sugar
2 tsp. vanilla or anise flavor
3 eggs
1 lb. ricotta cheese
4 c. flour
1 tsp. baking soda
1 tsp. salt

ICING:

4 tbsp. butter
2 tsp. vanilla or anise
Confectioners' sugar
Milk to taste

Preheat oven to 350°F. Cream butter, sugar, flavor and eggs; add cheese. Beat with beater. Add flour, baking soda and salt. Beat well. Drop by teaspoon on ungreased cookie sheet. Bake 15 to 20 minutes. Drip icing over cooled cookies.

Makes 5 dozen.
