HASH BROWN CASSEROLE 
2 lbs. frozen hash brown potatoes
1/2 c. melted butter
1/4 c. chopped onion
1 can cream of mushroom soup
1 pt. sour cream
2 c. Cheddar cheese
Salt and pepper to taste

Partially thaw potatoes. Mix all ingredients and pour into 9x13 baking dish. Bake at 350 for 45 minutes to an hour. Top with additional shredded cheese or corn flake crumbs.
