BARBECUE MEATLOAF | |
1 1/2 lbs. ground beef 1 c. Italian bread crumbs 1 sm. onion, finely chopped 1 egg, beaten 1 1/2 tsp. salt 1/4 tsp. pepper 2 (8 oz.) cans tomato sauce, divided 1/2 c. water 3 tbsp. vinegar 3 tbsp. brown sugar 3 tbsp. Worcestershire sauce Combine beef, bread crumbs, onion, egg, salt and pepper. Add 4 ounce or No. 2 can of tomato sauce. Mix well. Form loaf and place in loaf pan. Mix remaining tomato sauce, water, vinegar, brown sugar and Worcestershire sauce as barbecue sauce to pour over loaf and use to baste while cooking. (Any extra sauce, refrigerate for later use.) Bake at 350 degrees for 1 hour and 15 minutes. Baste during cooking for a delicious crust around loaf. Note: Rebecca has waited for 10 years for her copy of this recipe.
