PIZZA MEATLOAF 
1 (8 oz.) can tomato sauce
3/4 tsp. Italian seasoning
1 egg, beaten
2 tbsp. dried parsley
1/2 c. fine dry bread crumbs
1 1/2 lbs. ground beef
3 oz. grated Mozzarella cheese
1/4 c. Parmesan cheese

Mix tomato sauce and Italian seasoning. Combine 1/3 cup of sauce mixture with egg, bread crumbs, and ground beef. On waxed paper, pat meat mixture into 9 inch square. In separate bowl, mix 2 ounces of Mozzarella cheese, Parmesan cheese, and parsley. Spread the cheese mixture over beef to 1/2 inch from the edge. Using the waxed paper, bring sides of beef mixture up and over cheese mixture to make a roll. Pinch edges together to seal in cheese mixture. Place, seam side down, in a pan. Bake at 325 degrees for approximately 45 minutes or until meat is done. Spoon remaining tomato mixture over the top of meatloaf and top off with remaining Mozzarella cheese. Heat until cheese melts.
