CHEESE GRITS 
3 3/4 c. water
1 c. grits
1 tsp. salt
1/4 tsp. black pepper
1/2 c. milk
1 lg. egg
1 c. shredded cheddar cheese

In 2 quart saucepan, heat 3 cups water to boiling. In small bowl, combine grits, salt, pepper and remaining 3/4 cup water. Stir grits mixture into boiling water. Cook, stirring until thickened and bubble. Cover and cook over low heat 5 minutes. Grease 1 1/2 quart baking dish. In cup, beat together milk and egg. Fold milk mixture and 1/2 cup cheese into grits. Turn mixture into greased baking dish. Top with remaining cheese. Bake grits 25 to 30 minutes or until cheese is bubbly and browned.
