CHEESE GRITS 
1 qt. milk
1 c. quick grits
2 sticks butter
Salt and pepper to taste
8 or 9 triangles Gruyere cheese, grated (1 box)
1 c. Parmesan cheese

Bring milk to a boil and slowly add grits and 1 stick of butter. Stir constantly over medium heat and cool until consistency of cereal. Remove from heat and beat for 3 minutes. Add another stick of butter and grated Gruyere cheese, salt, and pepper. Pour into a 13 x 9 inch greased baking dish. Sprinkle top with Parmesan cheese and bake at 350 degrees for 30 minutes until brown on top. Serves 8 to 10 people. This recipe is good for any meal. For spice, add jalapeno peppers.
