2 lg. zucchini
1 potato (lg. 8 oz.)
1 onion
2 eggs
Salt and pepper to taste
1/2 c. Matzo Meal

Shred zucchini. Mix all ingredients well. Bake in square pan in 350 to 375 degree oven for 40-60 minutes or until lightly browned.
