CHERRY TOMATOES PROVENCAL 
2 c. cherry tomatoes, halved
4 tbsp. finely chopped scallions
4 tbsp. chopped parsley
1 tsp. dried basil
1/2 tsp. chopped garlic
1/2 c. dry seasoned bread crumbs
1/2 tsp. salt
Pepper to taste
3-4 tbsp. olive oil

Preheat oven to 400 degrees. Place tomatoes in a single layer in an oiled baking dish. In small bowl, toss together scallions, 2 tablespoons parsley, basil, garlic, bread crumbs, salt and pepper. Spread over tomatoes. Drizzle oil over all. Bake for 12 minutes. Garnish with remaining parsley.

Cook Time: 12 minutes

Yields 8 servings.
