VAL'S STUFFED MEATLOAF 
2 lbs. hamburg (venison is great)
2 eggs
1 c. bread crumbs or rolled Ritz crackers

STUFFING:

3 c. bread (crusts if possible)
1 med. onion, diced
2 eggs
1/2 c. diced celery
Parsley flakes, salt, and pepper to taste

Mix all meatloaf ingredients well. Place 1/2 of meat mixture in bottom of pan. Flatten out about 1 inch thick. Break bread in pieces. Mix all stuffing ingredients. Place in middle of meatloaf bottom. Place remaining meat mixture in pie pan and flatten. Remove and put over top of stuffing and join meats together. Pour water on and bake at 350 degrees for 1 1/2 to 2 hours.
