MELT IN YOUR MOUTH BLUEBERRY CAKE | |
2 egg whites 1 c. powder sugar, divided 1/2 c. butter dash of salt 1 tsp. vanilla 2 egg yolks 1 1/2 c. all purpose flour 1 tsp. baking powder 1/3 c. of milk 1 1/2 c. blueberries granulated sugar Heat oven to 350°F. Grease an 8 x 8-inch baking pan and set aside. In small bowl of electric mixer, beat egg whites until stiff. Add 1/4 cup of sugar to egg whites and beat until sugar is well combined. Set aside. In a separate bowl, cream butter, salt, and vanilla. Add remaining 3/4 cup sugar and egg yolks. Beat until light and fluffy. Sift together flour and baking powder. Add alternately with milk to butter and sugar mixture. Fold in reserved egg white mixture and blueberries. Pour batter into prepared baking pan and sprinkle the top with granulated sugar. Bake for 50 minutes. Makes 9 servings. |
