CHICKEN A LA KING 
1/4 c. butter
1 c. sliced mushrooms
1/4 c. chopped green peppers
3 tbsp. flour
2 c. milk
Salt and pepper to taste
1 beaten egg
2 1/2 c. diced cooked chicken breasts
2 tsp. finely cut pimento

Lightly brown mushrooms and green peppers in the butter. Add flour, milk, salt and pepper. Cook until mixture thickens, stirring constantly. Stir some hot mixture into beaten egg yolk. Add to remaining mixture. Cook 2 minutes. Add chicken and pimento. Optional: 1/8 to 1/4 cup cooking sherry. Serves 4.
