CORN CASSEROLE | |
1 can whole corn 1 can cream-style corn 3 eggs, beaten 1 pkg. Jiffy corn bread mix 1 onion, med. 1/2 green pepper 1 1/2 c. grated cheese (Cheddar or American) 1 stick butter, melted 1 carton sour cream Saute onion and green pepper; add to mixture of whole corn, cream-style corn, eggs and corn bread mix. Add 1 cup grated cheese and butter. Pour into greased casserole. Top with 1/2 cup grated cheese and sour cream. Bake at 350 degrees for 45 minutes. (When cold, reheats beautifully in microwave oven.) |
