CORN CASSEROLE 
1 can whole corn
1 can cream-style corn
3 eggs, beaten
1 pkg. Jiffy corn bread mix
1 onion, med.
1/2 green pepper
1 1/2 c. grated cheese (Cheddar or American)
1 stick butter, melted
1 carton sour cream

Saute onion and green pepper; add to mixture of whole corn, cream-style corn, eggs and corn bread mix. Add 1 cup grated cheese and butter. Pour into greased casserole. Top with 1/2 cup grated cheese and sour cream. Bake at 350 degrees for 45 minutes. (When cold, reheats beautifully in microwave oven.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
