REFRIGERATOR MASHED POTATOES 
5 lb. (9 lg.) peeled potatoes
6 oz. cream cheese
1 c. sour cream
1/4 tsp. white pepper
2 tbsp. butter

Boil potatoes in salted water until tender. Drain and mash well (use electric mixer). Add remaining ingredients; refrigerate. May be used any time within 2 weeks. Bake at 350 degrees for 30-40 minutes. Serves 12.

To use, place in greased baking dish. Dot with butter and bake. (I put the amount we need for 1 meal in dish and heat in microwave until hot.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
