ZUCCHINI & SUMMER SQUASH 
2 zucchini (med. size)
2 summer squash (med. size)
1 red pepper, fresh
5 lg. cloves garlic (parboiled 5 min.)
Salt & pepper to taste

Place above (tossed together) then spread out on cookie sheet. Drizzle with olive oil. Bake about 10 minutes at 500 degrees. Add fresh basil and a little flavored vinegar (balsamic). Toss with some sunflower seeds or nuts before serving.
