CAULIFLOWER WITH BLACK BUTTER
SAUCE
 
1 head cauliflower
1/2 c. butter
1 c. fresh bread crumbs
1 tbsp. vinegar
Salt and pepper

Clean and cut cauliflower into flowerettes. Steam just tender. Meanwhile toss the crumbs in 2 tablespoon of the butter until crisp and golden. Set aside. Melt and brown the remaining butter in pan. Remove from heat. Place cauliflower on heated serving dish. Sprinkle with vinegar, salt and pepper. Brush with the browned butter and top with the crumbs.
