POTATO SOUP | |
2 slices bacon 1 c. diced raw potatoes 1 3/8 oz. pkg. dry onion soup mix 3 1/2 c. cold water 1/2 c. tomato juice 1/2 c. cooked peas In 3 quart sauce pan, fry bacon over medium-low heat. Remove bacon, drain on paper toweling and crumble. Brown potatoes in bacon drippings over medium-low heat. Add soup mix, water and tomato juice. Stir and bring to boil over medium heat; cover, reduce heat to low and simmer for 15 minutes. Add peas. Heat until hot. Garnish each serving with crumbled bacon. Makes 4 to 6 servings. |
