SHRIMP SCAMPI 
1 stick butter
1 red pepper (sweet)
4 cloves garlic
1 tsp. basil
1 tsp. thyme
1 lb. fresh or frozen shrimp

Melt butter in pan. Saute garlic. Add basil and thyme. Add red pepper. Add peeled and deveined shrimp. Cover and simmer until done (shrimp is done when they turn pink). Serve over regular or spinach linguini or rice.
