MOUSSAKA 
3 tbsp. butter
3/4 c. chopped onion
2 tsp. salt
1 tsp. pepper
1 lb. beef
1/2 lb. ground pork
1 c. tomato puree
1 c. flour
2 med. eggplant, peeled sliced 1/2" thick
1 c. oil
1/2 c. oil
1/2 c. Parmesan cheese
1/2 tsp. salt & garlic
1/2 c. water
1/4 tsp. nutmeg

Melt butter. Add onion, salt and pepper; saute. Add beef, pork and garlic salt. Stir until meat is brown. Stir in tomato puree, water and nutmeg. Coat eggplant with flour. Fry both sides. Place half eggplant in greased 13 x 9 1/2 inch pan. Cover with half meat mixture. Repeat layers. Sprinkle with cheese. Bake at 350 degrees for 30 minutes. Serves 6-8.
