POTATO CAKES 
1 c. left-over mashed potatoes
1 egg, well beaten
4 tbsp. flour, rounded
1/2 tsp. baking powder
1/2 tsp. onion salt
1/2 tsp. salt (go light on salt if potatoes have been salted)
1/4 c. milk

Mix above ingredients and drop by tablespoonfuls into hot fat. Brown on both sides. Serve immediately.
