MEATLOAF 
2 1/2-3 lb. hamburger
1 green pepper
1 lg. onion
2 eggs
1 tbsp. mustard
1/2 c. milk
1/2 c. tomato juice
1 c. bread crumbs

Chop and fry pepper and onions until soft. Add a few tablespoons of water and cover frying pan. Simmer for 15 minutes.

Beat eggs in milk and add mustard, tomato juice and bread crumbs. Add meat, peppers and onions. Mix salt and pepper to taste. This will make 2 loaves or 1 loaf and several meatballs. Freezes well.
