COFFEE CAKE SURPRISE 
3 c. flour
1 3/4 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 c. oil
1 (8 1/4 oz.) can pineapple and juice
3 eggs
1 1/2 tsp. vanilla and nutmeg
2 c. bananas, sliced (optional)

RICOTTA TOPPING:

1 lb. Ricotta cheese
3/4 c. sugar
2 eggs
2 tsp. vanilla

Combine first 5 ingredients. Make a hole in center of mix. Add next 5 ingredients. Spoon mix into greased 9x13 baking dish. Stir Ricotta Topping well and spoon over top of cake mix. Bake at 350 degrees for 1 hour.
