GERMAN POTATO SOUP | |
1 med. onion, chopped fine 1 clove garlic, minced 2 tsp. butter 1 tsp. flour 2 c. grated potatoes, cooked 2 c. milk 1/2 c. chopped ham or bacon 1 lg. egg yolk Salt & pepper as you wish Brown onion and garlic in butter until onion is golden. Add flour; stir until smooth. Add potatoes and cook for two minutes. Gradually add milk, stirring until smooth. Add ham or bacon. Salt and pepper to taste (extra pepper brings out taste). Add egg yolk, stirring until creamy and soup is heated through. Serves 4 to 6. |
