SUGAR-FREE CAKE | |
2 c. raisins 3 c. water 2 eggs, beaten 1 c. unsweetened applesauce 3 tbsp. liquid sweetener 3/4 c. oil 1 tsp. vanilla 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg Cook raisins and water until water is absorbed and cool. Mix eggs, applesauce, sweetener, oil and vanilla. Sift remaining ingredients. Add flour mix to egg mixture; add raisins and 1 cup chopped nuts. Pour in floured Bundt pan. Bake at 350°F for approximately 1 hour. |
