BRUNCH EGGS 
2 c. diced cooked potatoes
1 c. shredded Cheddar cheese
2 tbsp. finely chopped onion
8 oz. pkg. brown and serve sausage links
6 eggs
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. minced parsley
1/2 c. cream

Grease an 8-inch square baking dish. Place potatoes in bottom. Top with cheese and onion. Arrange sausages on cheese to outline 6 servings. Break eggs one at a time, placing 1 egg on potatoes in each section. Season with salt, pepper, and parsley. Pour cream over eggs Bake at 350 degrees for 20 minutes, or until eggs are set.
