DENVER POTATO PIE 
6 eggs
1/4 tsp. salt
3 c. frozen hash browns
4 oz. (1 c.) shredded Cheddar cheese
1/2 c. cooked diced ham
1/2 c. chopped green pepper
1 tomato, thinly sliced (optional)
1/2 tsp. onion powder
1/8 tsp. pepper

Heat oven to 350 degrees. Generously grease a 9-inch pie pan. In medium bowl, combine eggs, onion powder, salt and pepper; beat well. Stir in potatoes, 3/4 cup cheese, ham and green pepper; pour into prepared pan. Top with remaining cheese and tomato slices. Bake at 350 degrees for 40-45 minutes or until set.
