MICROWAVE - PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted, salted peanuts
1 tsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

Stir sugar and syrup together in 2 quart casserole. Microwave on HIGH, 4 minutes. Stir in peanuts. Microwave at HIGH, 3 to 5 minutes, until light brown. Add butter and vanilla, blend well and microwave on HIGH, 1 to 2 minutes. Add baking soda and stir until light and foamy. Pour mixture onto lightly greased cookie sheet. Cool 1 hour and break into small pieces. Store in airtight container. Makes approximately 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
