CHOCOLATE-FROSTED NUTMEG ROLL 
Preparation time: 30 minutes. Baking time: about 20 minutes at 350 degrees. Chilling time: about 3 hours. Serves: 9. (One 10 inch roll.)

1 c. sifted cake flour
1 1/4 tsp. baking powder
1/2 tsp. nutmeg
1/4 tsp. salt
4 eggs, room temp., separated
1 c. light brown sugar, packed
1 tsp. vanilla
2 tbsp. orange juice
2 tsp. grated orange peel
Powdered sugar
Chocolate Frosting, recipe follows

1. Grease a 15 x 10 inch jelly roll pan. Line with waxed paper. Grease paper.

2. Sift together flour, baking powder, nutmeg and salt.

3. Beat egg whites until soft peaks form. Gradually beat in 1/4 cup sugar until stiff.

4. In a deep bowl, beat egg yolks with remaining sugar. Add vanilla, orange juice and peel. Fold in whites. Blend in flour mixture. Turn into pan. Bake at 350 degrees for 20 minutes.

5. Turn cake out onto towel sprinkled with sugar. Remove paper. Roll up jelly roll style. Wrap in towel. Cool.

6. Unroll. Spread with 1/3 of frosting. Reroll. Frost. Chill.
