JELLO-BANANA BREAD 
1/2 c. butter
3/4 c. sugar
1 egg, beaten
3 tbsp. milk
1 1/2 tsp. baking soda
1 c. mashed bananas
1 (3 oz.) pkg. Jello, any flavor (apricot or strawberry are good)
1 tsp. baking powder
2 c. flour

Cream butter; add sugar and egg. Mix well. In separate high bowl, combine milk, gelatin and soda. Mix; will fizz. Add bananas. Mix together with butter mixture. Add flour, sifted with baking powder to mixture and mix well. Pour into greased 9 x 5 inch loaf pan. Bake at 350 degrees for 40 minutes until toothpick comes out clean. Cool 10 minutes. Remove from pan.

The recipe seemed like it could be quirky enough to turn out great. It did not. Why add jello (additional sugar and food coloring) to a recipe that was perfected long ago? Jello does not add any desirable flavor; instead, it changes the taste of bananas, it mutes that taste and mixes it with jello. It does not work. Besides that problem, the color of jello in banana bread looks like someone got sick. I cut up the red-ish loaf and gave it to our family pig. He loved it.
