CHICKEN SALAD BASKETS 
Sprigs of parsley
2 c. chicken salad
Melted butter
60 slices white sandwich bread (trimmed)

Preheat oven to 300 degrees. Grease small muffin tins. Brush trimmed bread with melted butter. Place in muffin tins so that 4 corners protrude above muffin tin. Toast in 300 degree oven. Spoon chicken salad into toasted cups and garnish with sprigs of parsley.
